    Abstract

    The Americas, encompassing both North and South America, produce a large number of probiotic beverages. Some of these beverages are produced by large global manufacturers and others by smaller local companies or even produced in the home. Local regulations on what is a probiotic beverage and how is its production and safety monitored vary greatly. This chapter explores probiotic beverage production, regulation, and some historical indigenous beverages, with a primary focus on the USA, Canada, Mexico, Brazil, and Argentina.
