Abstract
The gin category has enjoyed a renaissance in recent years boosted in the UK by changes in legislation permitting production at small scale. A vast number of craft producers have emerged bringing innovative methods and exciting flavor profiles. In this chapter, the impact of distillation method on extraction of essential oils is detailed. The contribution of a range of botanicals to the flavor profile of gin is described in addition to factors impacting product quality.
