Designing Gin: Conception to Commercial Production

Abstract

In recent years there has been an explosion in UK gin production with sales reaching £1billion in 2016. The rise in craft distilling in particular has led to massive consumer choice with over 200 gins available. Over the course of a 2 year Knowledge Transfer Partnership between Edinburgh Gin and the International Centre for Brewing & Distilling, the process of taking a gin concept from recipe design to commercial production has been dissected resulting in a wealth of information on botanical selection and process optimization. In this presentation we examine the gin category, core botanicals and the assessment of new botanicals. We also look at methods of distillation, scale-up and the influence of cut-points giving comprehensive coverage of the key issues in development of a new gin.
