Abstract

This paper presents some solutions to the problem of modelling Ohmic heating of foods. The behavior of non-local reactive convective problem is carefully considered by Please, Schwendeman and Hagen who looked at the stability of models allowing for different type of flow. Homogeneous and inhomogeneous cases are discussed. Here, the basic one dimensional, non-local hyperbolic model for the simplest case of a plug flow of a homogeneous material is considered.
