Research interests

Research in my laboratory follows two main themes.

Using yeast to understand the mechanisms of toxicity of food additives and the characterisation of industrial yeast strains, in particular distillers yeast with a view to manipulating and improving the fermentation process. This is being carried out using proteomic and genomic sequencing approaches.

We are also characterising a number of novel bacterial strains isolated from the marine environment, which produce antimicrobial substances strongly active against a variety of pathogens and food spoilage organisms. Several promising bacterial strains are being characterised by molecular genetic and chemical approaches with a view to identifying the active molecules.
